Lactic Acid Bacteria

Leuconostoc mesenteroides is one of the major species classified as lactic acid bacteria.  Lactic acid is colorless, liquid and organic.  It can be mixed with water, and it helps to prevent the growth of other bacteria that can be harmful.  Other major lactic acid bacteria include Lactobacillus and Streptococcus.

 

Lactic acid bacteria:

 

·         are Gram positive                                                                                                                                                                                                                                                                                                      

·         do not produce  spores                                                                                                                                                                                                                                                                                   

·         play important roles in fermentationn

                                                                                                                                                                                                                                                  

·         ferment carbohydrates, amino acids, peptides, vitamins, metallic ions

                                                                                                                                                                 

·         produce lactic acid (C3H6O3) at the end of  fermentation                                                                                                                                                                                                                   

·         Leuconostoc mesenteroides, and Streptococcus, are in the group of lactic acids that produce the least amount of acid at the end of fermentation.

                                    

·         In addition to lactic acid, as a heterofermenter that breaks down glucose and amino acids for energy, Leuconostoc mesenteroides also produce ethanol and carbon dioxide.   

                                                                                                                                                                                                                                                                                                                              

·         Often, they work in combination with other lactic acid bacteria.                                                                                                                                                                                                      

·         Leuconostoc mesenteroides bacteria are different from other lactic acid bacteria in some ways.   Compared to other lactic acid bacteria, Leuconostoc mesenteroides:

     

o   are able to withstand higher salt concentrations

                                                                                                                                                                                                                       

o   are able to withstand higher sugar concentrations

                                                                                                                                                                                                             

o   begin growth on vegetables faster in varying salt and temperature situations
